The key to great tailgate BBQ is understanding one simple truth: the less you cook on-site, the better everything turns out.
## The Best Portable Setup
Forget hauling your full-size smoker to the parking lot. You need compact, efficient gear that heats up fast.
**The ideal tailgate rig:**
- A portable charcoal grill for direct cooking
- A small propane burner for reheating and saucing
- Two quality coolers — one cold (drinks), one hot (pre-cooked meats wrapped in towels)

## What to Pre-Cook vs. Cook On-Site
**Pre-cook at home (day before):**
- Pulled pork — fully cooked, shredded, sealed in aluminum trays
- Smoked mac and cheese — made completely, reheat on-site
- Beans, coleslaw, any cold sides
**Finish or cook on-site:**

## Keeping Things Hot
